Ingredients

Scale

For the Burrito:

  • 4 large flour tortillas
  • 6 large eggs
  • ½ cup whole milk (for fluffier eggs)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon garlic powder (optional)
  • ½ teaspoon paprika (for extra flavor)
  • ½ cup shredded cheddar cheese (or Monterey Jack)
  • ½ cup cooked sausage
  • 1 medium avocado, sliced
  • ½ cup diced tomatoes
  • ½ cup hash browns, cooked
  • 2 tablespoons butter (for scrambling eggs)

Optional Toppings:

  • Salsa or hot sauce
  • Sour cream or Greek yogurt
  • Fresh cilantro, chopped
  • Pickled jalapeños

Instructions

  1. Prepare the Ingredients:

    • Cook the sausage until browned then drain on paper towels
    • Cook the hash browns until golden and crispy. Set aside.
  2. Make the Scrambled Eggs:

    • In a bowl, whisk together eggs, milk, salt, black pepper, garlic powder, and paprika.
    • Melt butter in a non-stick skillet over medium-low heat. Pour in the eggs and cook slowly, stirring occasionally, until soft and fluffy. Remove from heat.
  3. Assemble the Burrito:

    • Lay a tortilla flat on a surface. Sprinkle a little cheese in the center.
    • Add a portion of scrambled eggs, sausage, hash browns, avocado slices, and diced tomatoes.
    • Fold in the sides, then roll tightly from the bottom up to create a burrito shape.
  4. Toast the Burrito (Optional):

    • Heat a dry skillet over medium heat. Place the burrito seam side down and toast for about 1-2 minutes until golden brown. Flip and toast the other side.
  5. Serve and Enjoy:

    • Cut in half and serve warm with salsa, sour cream, or your favorite toppings!

Notes

  • Make it Vegetarian: Swap the bacon for sautéed mushrooms or black beans.
  • Make it Spicy: Add jalapeños, hot sauce, or a sprinkle of chili flakes.
  • Low-Carb Option: Use a low-carb tortilla or wrap everything in a lettuce leaf instead.
  • Meal Prep: These burritos can be frozen for up to 3 months. Wrap tightly in foil, then reheat in a skillet or microwave.
