Instructions

- Mix the creamy base: In a large mixing bowl, combine sour cream, cream of chicken soup, whole milk, melted butter, garlic powder, onion powder, salt, and black pepper. Stir until well mixed.
- Assemble the casserole: Add the potatoes and 1½ cups of cheddar cheese + Monterey Jack cheese to the bowl. Stir until the potatoes are well coated.
- Transfer to the baking dish and spread evenly.
- Top with remaining cheese and (if using) the crushed cracker topping mixed with melted butter.
- Bake uncovered for 45-50 minutes until the potatoes are tender and the top is golden brown.
- Garnish with parsley and let cool for 5 minutes before serving.
