  • 1 cup Monterey Jack cheese, shredded

  • 1 can (10.5 oz) cream of chicken soup (or cream of mushroom for vegetarian option)
  • ½ cup whole milk
  • 4 tbsp unsalted butter, melted
  • ½ tsp garlic powder
  • ½ tsp onion powder

Instructions

  • Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  • Prepare the potatoes: If using fresh potatoes, peel and dice (or slice thinly for a scalloped version). If using frozen hashbrowns, let them thaw slightly.
  • Mix the creamy base: In a large mixing bowl, combine sour cream, cream of chicken soup, whole milk, melted butter, garlic powder, onion powder, salt, and black pepper. Stir until well mixed.
  • Assemble the casserole: Add the potatoes and 1½ cups of cheddar cheese + Monterey Jack cheese to the bowl. Stir until the potatoes are well coated.
  • Transfer to the baking dish and spread evenly.
  • Top with remaining cheese and (if using) the crushed cracker topping mixed with melted butter.
  • Bake uncovered for 45-50 minutes until the potatoes are tender and the top is golden brown.
  • Garnish with parsley and let cool for 5 minutes before serving.
